I like the logo, but the mascot sould still be Ruby.

Mascot design here is genius, incorporates your identity on all levels (social, cultural, psychological).
Previous Designs seem to be favoring #3 in your list of 8, but the hi-no-maru (rising sun) flag causes a visceral dislike. I fyou could somehow take out the rising sun and put in the new mascot, you have an unbeatable combination.
